Ontama Bukkake

One of my favourite cuisines is Japanese and one of my favourite Japanese restaurants in Sydney would have to be Menya Mappen! Time and time again, I always order the same thing: Ontama Bukkake Cold Soba with a side serving of seaweed salad (wakame)! It's such a simple, light and healthy meal and always manages to fill me up - even without adding on any of the tempting tempura selections. Such a simple dish that I couldn't help looking up how to make it - so here's a variation of some recipes I found that will hopefully satisfy my cravings when I can't make it into town! (Wish me luck, I have yet to try this at home!)

Ingredients:
  • Udon/Soba
  • Egg
  • Wedge of lemon
  • Kakedashi soup: mirin, dashi, soy sauce
  • Chopped spring onion
  • Tempura flakes (Tenkasu)
  • Seaweed salad (Wakame)
Method:
  • Soup:
    • Boil: 1 cup water + 1/3 cup of mirin + 1/3 cup of soy sauce + 1/2 sachet of dashi
  • Soft boiled egg:
    • Put the egg in a pot and add water to just cover the egg
    • Turn the stove to max - once the water starts to boil, reduce to simmer for 3 minutes
    • Remove from water
  • Cook udon/ramen according to instructions
  • Serve noodles in a bowl, pour in a few spoons of soup without covering noodles
  • Crack in the egg, add lemon, seaweed, spring onions and tempura flakes and voila!
