Ingredients:
- Udon/Soba
- Egg
- Wedge of lemon
- Kakedashi soup: mirin, dashi, soy sauce
- Chopped spring onion
- Tempura flakes (Tenkasu)
- Seaweed salad (Wakame)
Method:
- Soup:
- Boil: 1 cup water + 1/3 cup of mirin + 1/3 cup of soy sauce + 1/2 sachet of dashi
- Soft boiled egg:
- Put the egg in a pot and add water to just cover the egg
- Turn the stove to max - once the water starts to boil, reduce to simmer for 3 minutes
- Remove from water
- Cook udon/ramen according to instructions
- Serve noodles in a bowl, pour in a few spoons of soup without covering noodles
- Crack in the egg, add lemon, seaweed, spring onions and tempura flakes and voila!
